If time permitted I would rather spend my time in my lovely kitchen than sitting down doing nothing. I decided to bake these cookies when I finished cooking my dinner last night. These delicately scented cookies are a real teatime treat. Yes oranges cookies with coffee or tea....
115g unsalted butter 50g caster sugar finely grated rind of 2 oranges 175g all purpose flour
Preheat oven to 190C. Grease a large baking sheet Beat together the butter and sugar until soft and creamy. Beat in orange rind
Gradually add the flour and gently pull the dough to form a soft ball. Roll out the dough on a lightly floured surface to about 1cm thick
Cut to desired shape, sprinkle over a little extra caster sugar and place on the baking sheet.
Bake for 20 min or til the cookies are a light colour
Transfer the cookies to a wire rack and leave to cool.
Bottom layer 200g sweet biscuits, crushed 120g butter , melted
Upper layer 40g custard powder 250g caster sugar 60g cornflour 750ml milk 250ml lemon juice 185ml water (I substituted with orange juice) 60g butter 3 egg yolks
Lightly grease a 20X30CM tin and line with baking papaer
Combined the biscuit crumbs and melted butter and press firmly into the prepared tin
Put the suctard powder sugar cornflour in a saucepan. Mix the milk lemon juice and orange juice in a separate bowl and gradually stir into the custard mixture. Stir overmedium heat until the custard thickens.
Remove and cool a little. Whisk in the butter and egg yolks.
Pour over the base and chilled for 3 hours before serving.
