曾经这是我常爱做的蛋糕之一,慢慢的食谱多了选种也多了,将它遗忘了。 搬家后,终于把冷藏了一年的食谱再度翻出来,才发现它是曾经的美。简单容易上手,不会失败的蛋糕。我终于明白为什么之前常常都爱做这蛋糕了。
材料
全蛋2粒 砂糖 160克 柠檬皮屑2 小匙 香橙皮屑2小匙 橄榄油 125ML 自发粉 185克 鲜奶 60ML 橙汁 60ML
Ingrediant
2 eggs 160g caster sugar 2 tsp fined grated orange rind 2 tsp finely grated lemon rind 125ml olive oil 185g self-raising flour 60ml milk 60ml orange juice
做法
- 预热烤炉180C。 取20CM圆盘,铺上蛋糕纸。
- 拌匀蛋和砂糖
- 加入柠檬和香橙皮屑,搅匀后加入橄榄油
- 筛入粉于No3,再拌入鲜奶与橙汁。搅拌约30秒
- 倒入预备的盘中,烘45分钟,把蛋糕置于盘内5分钟后再倒扣。
Method
- Preheat oven to 180C. Lightly grease a shallow 20cm (8in) pan and line the base with baking paper
- Whisk eggs and sugar in a mixing bowl until well combined
- Add lemon and orange rind, then gradually stir in olive oil
- Stir the sifted flour alternately with the milk and orange juice. Stir the mixture gently for 30 sec.
- Pour the mixture into the prepared tin and baked for 45 min. Leave to cool in the tin for 5 min before turning out onto the wire rack
You may dust the cake with icing sugar before serving. Or top it with the candied rind
