平实的魅力-橄榄油橙皮柠檬皮蛋糕



曾经这是我常爱做的蛋糕之一,慢慢的食谱多了选种也多了,将它遗忘了。 搬家后,终于把冷藏了一年的食谱再度翻出来,才发现它是曾经的美。简单容易上手,不会失败的蛋糕。我终于明白为什么之前常常都爱做这蛋糕了。


材料
全蛋2粒 砂糖 160克   柠檬皮屑2 小匙 香橙皮屑2小匙 橄榄油 125ML 自发粉 185克 鲜奶 60ML  橙汁 60ML

Ingrediant
2 eggs  160g caster sugar  2 tsp fined grated orange rind  2 tsp finely grated lemon rind  125ml olive oil  185g self-raising flour  60ml milk  60ml orange juice




做法


  1. 预热烤炉180C。 取20CM圆盘,铺上蛋糕纸。
  2. 拌匀蛋和砂糖
  3. 加入柠檬和香橙皮屑,搅匀后加入橄榄油
  4. 筛入粉于No3,再拌入鲜奶与橙汁。搅拌约30秒
  5. 倒入预备的盘中,烘45分钟,把蛋糕置于盘内5分钟后再倒扣。
撒上糖粉于蛋糕体上,或与蜜饯柠檬香橙一块享用。



Method
  1. Preheat oven to 180C. Lightly grease a shallow 20cm (8in) pan and line the base with baking paper
  2. Whisk eggs and sugar in a mixing bowl until well combined
  3. Add lemon and orange rind, then gradually stir in olive oil
  4. Stir the sifted flour alternately with the milk and orange juice.  Stir the mixture gently for 30 sec.
  5. Pour the mixture into the prepared tin and baked for 45 min.  Leave to cool in the tin for 5 min before turning out onto the wire rack

You may dust the cake with icing sugar before serving. Or top it with the candied rind





喜欢橙皮与柠檬皮的清香,加上不油腻的橄榄油,它就拥有这平实的魅力。
